Summer is one time of year when it’s universally acceptable to spend as little time in the kitchen as possible. You’ll find your time is much better spent catching up on that horribly entertaining summer novel, or ensuring that you’re meeting (exceeding) your daily requirement of vitamin D. This is where tapas come in. You can make a whole meal around things like bread, cheese, and roasted vegetables. A whole meal essentially made up of appetizers? Yes, please!

Since you’re using simple ingredients, it’s easy to combine them in unpredictable ways. For example, fig, gorgonzola and honey may just leave you wondering  where this combination has been your whole life. Roasted red pepper, burrata, and pine nuts sounds like it would quickly become my personal favorite. Whatever you choose, your guests will inevitably be impressed, and you’ll be able to spend some extra time planning that next trip to the beach.
